Gourmandize

This cheerful bunny-shaped veggie platter is as adorable as it is healthy—perfect for entertaining kids and adults alike. Bright, crunchy vegetables form the shape of a bunny face, with a creamy dip nestled in as the nose. It’s a festive, fuss-free appetizer that brings color and crunch to your Easter table in under 30 minutes. Feel free to be creative with the fruits and vegetables you already have on hand!

Ingredients (for 6–8 servings):

  • 1 cup cherry tomatoes (for cheeks or bow tie)
  • 1 cup baby carrots (for ears)
  • 1 cup cucumber slices (for face)
  • 1 cup sugar snap peas or green beans (for outline/fillers)
  • ½ red bell pepper, sliced into thin strips (for mouth and ears)
  • ½ black olive, halved (for eyes)
  • 1 small radish slice (for nose, optional)
  • 1 cup ranch or tzatziki dip, placed in a small bowl

Instructions:

  1. Choose a large platter or cutting board as your base.
  2. Spoon dip into a small bowl and place it near the center-bottom of the platter—this will be the bunny’s nose.
  3. Arrange cucumbers in a circular shape around the dip for the bunny’s face.
  4. Use baby carrots to form two tall ears at the top of the face. Line the inside of each ear with red pepper strips.
  5. Add cherry tomatoes to form bunny cheeks or a playful bow tie beneath the face.
  6. Place black olive halves as eyes, and a radish slice or small cherry tomato as the nose if not using the dip bowl for it.
  7. Fill in with snap peas or green beans to round out the shape and add color contrast.
  8. Serve immediately or refrigerate until guests arrive.
