Citrus Garlic Orzo 

Bright, colorful, and layered with fresh lemony flavor, this orzo pasta is an easy win for any spring table. It's light yet satisfying and pairs wonderfully with grilled meats or a crisp salad. It's quick to prepare but full of bright flavor, making it perfect for brunches, picnics, or simple weeknight meals.

Ingredients (for 4–6 servings):

  • 1 ½ cups orzo pasta
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 cup baby spinach, roughly chopped
  • ¾ cup frozen peas, thawed
  • Zest and juice of 1 lemon
  • ¼ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper, to taste
  • Optional: crumbled feta or goat cheese for topping

Instructions:

  1. Bring a large pot of salted water to a boil. Add orzo and cook for 7–9 min. until tender. Drain and set aside.
  2. In a large skillet, heat olive oil over medium. Add garlic and cook for 1 min. until fragrant. Stir in spinach and peas, and cook for 2–3 min. until spinach wilts.
  3. Add the cooked orzo to the skillet. Stir in lemon zest, lemon juice, Parmesan, and parsley. Season with salt and pepper to taste.
  4. Transfer to a serving bowl and top with crumbled feta or goat cheese if using. Serve warm or at room temperature.
