Roasted Tomato and Burrata Trofie

This elegant yet effortless dish brings together the rich flavor of homemade basil pesto, the sweetness of roasted cherry tomatoes, and the creamy indulgence of burrata. Twirls of trofie pasta catch every bit of the herby sauce, while toasted pine nuts add crunch and a finishing touch. It’s a vibrant, crowd-pleasing plate perfect for spring gatherings or a weeknight treat that feels like something special.

Ingredients (for 4 servings):

For the Pasta: 

  • 12 oz trofie pasta (or substitute fusilli or penne)
  • 1 ½ cups cherry tomatoes
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • ¾ cup basil pesto (store-bought or homemade)
  • 2 balls burrata cheese
  • 2 tbsp toasted pine nuts
  • Fresh basil leaves, for garnish (optional)

For the Pesto:

  • 2 cups fresh basil leaves
  • ? cup grated Parmesan cheese
  • ¼ cup pine nuts
  • 1 garlic clove
  • ½ cup olive oil
  • Salt, to taste

Instructions:

  1. Preheat oven to 400°F. Place cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 15–20 min. until soft and slightly blistered.
  2. Cook the pasta: In a large pot of salted boiling water, cook pasta until al dente according to package directions. Reserve ¼ cup pasta water, then drain.
  3. In a food processor, blend basil, Parmesan, pine nuts, and garlic. With the motor running, slowly stream in olive oil until smooth. Season with salt to taste.
  4. In a large bowl, combine warm pasta with pesto, adding a splash of reserved pasta water to loosen the sauce if needed.
  5. Divide the pasta among plates or serve in a large dish. Top with roasted tomatoes, burrata (tear open gently to expose the creamy center), and a sprinkle of pine nuts. Garnish with basil leaves if desired.
