Glazed Lemon Loaf

Every slice of this lemon loaf delivers soft texture, citrusy brightness, and that signature sweet glaze—making it a must-bake for lemon lovers and spring gatherings alike. It’s perfect as a bright breakfast bite, afternoon pick-me-up, or easy spring dessert!

Ingredients (for 1 loaf):

For the Cake:

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup plain Greek yogurt or sour cream
  • 2 tbsp lemon zest
  • ¼ cup freshly squeezed lemon juice
  • 1 tsp vanilla extract

For the Glaze:

  • ½ cup powdered sugar
  • 1–2 tbsp lemon juice (to desired consistency)

Instructions:

  1. Preheat oven to 350°F. Grease a 9x5-inch loaf pan and line with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then mix in Greek yogurt, lemon zest, lemon juice, and vanilla.
  4. Gradually add dry ingredients to wet, mixing just until combined—do not overmix.
  5. Pour batter into prepared loaf pan and smooth the top. Bake for 45–50 min., or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 min., then transfer to a wire rack.
  7. While the cake is still warm, whisk together glaze ingredients and drizzle over the top.
