Strawberry Chia Pudding

Creamy, lightly sweet, and layered with fruit, this chia pudding is a no-bake wonder that doubles as breakfast or dessert. The combination of coconut milk and maple syrup provides a rich base, while fresh strawberries bring a bright, summery flavor. It’s easy to make and even easier to customize with additional fruit or granola. Just mix, chill, and enjoy.

Ingredients (for 4 servings):

  • 1/4 cup chia seeds
  • 1 cup coconut milk
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1 cup diced strawberries

Instructions:

  1. In a bowl or jar, mix chia seeds, coconut milk, maple syrup, and vanilla.
  2. Let sit 5 minutes, stir again, then refrigerate for 2–3 hours until thickened.
  3. Layer with fresh strawberries before serving.
