Vegetable Skewers

Colorful and healthy, these skewers are loaded with your favorite vegetables. Grilled until tender and lightly charred, they're a flavorful and fun addition to your cookout. Customize with whatever veggies you have on hand.

Ingredients (for 4 servings):

  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 red onion, chopped
  • 8-10 button mushrooms
  • 2 tbsp olive oil
  • Salt, pepper, and Italian seasoning, to taste
  • Wooden skewers, soaked in water

Instructions:

  1. Preheat grill to medium heat.
  2. Thread vegetables onto skewers and brush with olive oil.
  3. Season with salt, pepper, and Italian seasoning.
  4. Grill 8-10 minutes, turning occasionally, until tender.
  5. Serve warm or at room temperature.
