Ingredients (serves 4):
1 can of lychees in syrup (drained)
½ melon, cubed or scooped into balls
½ cucumber
1–2 celery stalks
1 fresh bell pepper (red or yellow for color)
A drizzle of olive oil
Juice of 1 lemon
Preparation:
Use a melon baller to scoop the melon into spheres, or simply cut it into cubes. Place in a large bowl.
Add the drained lychees.
Dice the cucumber (peel or leave the skin on, as you prefer) and finely chop the celery and bell pepper.
Combine all the ingredients in the bowl. Drizzle with olive oil and lemon juice, toss gently, and serve chilled.
