Ingredients (for 4 servings):
1 clove garlic, halved
1 cup dry white wine
8 oz Gruyère cheese, shredded
8 oz Emmental cheese, shredded
1 tbsp cornstarch
2 tsp lemon juice
Pinch of nutmeg
Bread cubes, blanched vegetables, or apple slices for dipping
Instructions:
Rub the inside of a fondue pot or saucepan with the cut side of the garlic, then discard the garlic.
Pour in the wine and lemon juice, then bring just to a simmer over medium heat.
In a bowl, toss shredded cheeses with cornstarch until evenly coated.
Gradually add cheese to the simmering wine, stirring constantly until smooth and melted.
Stir in a pinch of nutmeg, then transfer to a fondue pot over low heat.
