Ingredients (for 12 fritters):
For the Fritters:
2 cups flour
1/2 cup sugar
2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
2 eggs
1/2 cup milk
2 apples, diced
Oil for frying
For the Glaze:
2 cups confectioners' sugar, sifted
1/3 cup heavy cream, half-and-half, or whole milk
1/2 teaspoon pure vanilla extract
Instructions:
Mix flour, sugar, baking powder, cinnamon, and salt in a bowl.
In another bowl, whisk eggs and milk. Combine with dry ingredients.
Fold in the apples.
Heat oil in a pan to 350°F. Drop spoonfuls of batter into the oil and fry until golden.
In a separate bowl, combine confectioner's sugar, dairy of choice, and vanilla until smooth.
