Tabbouleh is a refreshing Middle Eastern salad that’s light, vibrant, and bursting with flavor. Made with fresh parsley, bulgur wheat, tomatoes, cucumbers, and a lemony dressing, it’s both nourishing and satisfying. The crisp vegetables and herbs provide a bright contrast to heartier meal prep staples, making it a great side or standalone dish. Ingredients (for 4 servings):
1 cup bulgur wheat
2 cups boiling water
2 cups fresh parsley, finely chopped
1/2 cup fresh mint, finely chopped
2 medium tomatoes, diced
1 cucumber, diced
4 green onions, sliced
1/4 cup olive oil
1/4 cup fresh lemon juice
Salt & pepper, to taste
Instructions:
Place bulgur in a bowl and pour boiling water over it. Cover and let sit for 20–25 min., until softened and fluffy.
Fluff bulgur with a fork and let cool slightly.
In a large bowl, combine the bulgur with parsley, mint, tomatoes, cucumber, and green onions.
Whisk together the olive oil, lemon juice, salt, and pepper, then pour over the salad. Toss until evenly coated.
Chill in the refrigerator for at least 30 min. before serving for the best flavor.
