Ingredients (for 4 servings):
1 block (14 oz) firm tofu, pressed and cubed
3 cups broccoli florets
2 tbsp vegetable oil
3 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp maple syrup or honey
2 garlic cloves, minced
1 tsp fresh ginger, grated
2 cups cooked white rice
Instructions:
Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden and crispy on all sides, about 6–8 min. Remove from skillet and set aside.
Add the remaining oil to the pan and sauté broccoli for 3–4 min. until bright green and just tender.
Stir in the garlic and ginger, cooking for 1 min. until fragrant.
Return the tofu to the pan, then add soy sauce, rice vinegar, and maple syrup. Toss everything to coat and cook for 2–3 min. until heated through.
