Ingredients (for 4 servings):
2 medium sweet potatoes, peeled and diced
1 tbsp olive oil
1 tsp chili powder
½ tsp cumin
1 (15 oz) can black beans, drained and rinsed
8 small tortillas
½ cup diced red onion
1 avocado, sliced
¼ cup fresh cilantro, chopped
Lime wedges, for serving
Instructions:
Preheat the oven to 400°F. Toss diced sweet potatoes with olive oil, chili powder, and cumin. Spread on a baking sheet and roast for 25–30 min., until tender and slightly crisp.
Warm the tortillas and spoon the roasted sweet potatoes and black beans into each.
Top with the red onion, avocado slices, and cilantro.
Finish with a squeeze of lime juice and serve immediately.
