This chicken alfredo is silky and indulgent, but it’s also a great way to sneak in veggies and a ton of protein! Pair it with fettuccine and a sprinkle of parsley.
Ingredients (for 2 servings):
2 chicken breasts
8 oz fettuccine
1 tbsp butter
2 cloves garlic, minced
1 cup spinach, raw
½ cup cream
¼ cup grated Parmesan
Salt, pepper, parsley
Instructions:
Preheat oven to 350 degrees F.
On a lined baking sheet, spray the chicken with cooking oil and season with salt and pepper.
Bake for 40 minutes until the chicken reaches an internal temperature of 165 degrees F.
Cook fettuccine; reserve ¼ cup water.
Sauté garlic in butter, then cook spinach until wilted.
Return sauce to pan, stir in Parmesan, and toss with pasta. Season and garnish with parsley.
