Ingredients (for 4 servings):
2 medium sweet potatoes, diced
1/2 lb smoked sausage, sliced
2 cups chopped kale
1/2 small onion, diced
2 cloves garlic, minced
1/2 tsp smoked paprika
Salt and pepper, to taste
2 tbsp olive oil
Instructions:
Heat olive oil in a large skillet over medium heat.
Add sweet potatoes and onion; sauté for 8–10 min. until slightly tender.
Stir in garlic, sausage, smoked paprika, salt, and pepper. Cook 5–7 min.more until sausage browns.
Add kale and cook for another 2–3 min., just until wilted.
