This dish brings together sweet apples and juicy chicken in a light cider glaze that screams fall. With just a handful of ingredients, this skillet meal delivers both elegance and ease. Great for weeknights but fancy enough for company.

Ingredients (for 4 servings):

  • 1 lb boneless skinless chicken thighs or drumsticks
  • 1 large apple, thinly sliced
  • 1/2 cup apple cider
  • 1 tbsp Dijon mustard
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh thyme for garnish (optional)

Instructions:

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a skillet over medium-high. Add chicken and sear 4–5 min. per side until golden and cooked through. Transfer to a plate.
  3. In the same skillet, melt butter and add apple slices. Cook for 2–3 min. until just tender.
  4. Stir in apple cider and mustard; bring to a simmer.
  5. Return chicken to skillet and simmer 3–5 more min. Garnish with thyme if desired.
