Ingredients (for 4 servings):
1 lb boneless skinless chicken thighs or drumsticks
1 large apple, thinly sliced
1/2 cup apple cider
1 tbsp Dijon mustard
1 tbsp butter
1 tbsp olive oil
Salt and pepper, to taste
Fresh thyme for garnish (optional)
Instructions:
Season chicken with salt and pepper.
Heat olive oil in a skillet over medium-high. Add chicken and sear 4–5 min. per side until golden and cooked through. Transfer to a plate.
In the same skillet, melt butter and add apple slices. Cook for 2–3 min. until just tender.
Stir in apple cider and mustard; bring to a simmer.
Return chicken to skillet and simmer 3–5 more min. Garnish with thyme if desired.
