This vibrant salad blends sweet roasted beets with juicy orange segments for a refreshing contrast. A honey-citrus vinaigrette and a scattering of pistachios bring balance and crunch. It’s as beautiful as it is delicious.

Ingredients (for 4 servings):

For the salad:

  • 3 medium beets, roasted and sliced
  • 2 oranges, segmented
  • 4 cups mixed greens
  • ¼ cup shelled pistachios or almonds
  • 1 avocado, sliced 
  • 2 oz goat cheese, optional

For the dressing:

  • 1 tbsp honey
  • 2 tbsp orange juice
  • 2 tbsp red wine vinegar
  • ¼ cup olive oil
  • Salt and pepper, to taste

Instructions:

  1. Arrange greens on a serving platter. Layer with sliced beets and orange segments.
  2. Sprinkle with nuts and goat cheese, if using. Top with avocado
  3. Whisk dressing ingredients and drizzle over salad just before serving.
