Ingredients (for 4 servings):
For the salad:
3 medium beets, roasted and sliced
2 oranges, segmented
4 cups mixed greens
¼ cup shelled pistachios or almonds
1 avocado, sliced
2 oz goat cheese, optional
For the dressing:
1 tbsp honey
2 tbsp orange juice
2 tbsp red wine vinegar
¼ cup olive oil
Salt and pepper, to taste
Instructions:
Arrange greens on a serving platter. Layer with sliced beets and orange segments.
