Shaved Brussels sprouts make a hearty and unexpected base for this Thanksgiving twist on Caesar salad. Tossed with a garlicky dressing and topped with toasted breadcrumbs, it’s a dish that converts even sprout skeptics. A little grated Parmesan rounds it out beautifully!

Ingredients (for 6 servings):

For the salad:

  • 1 lb Brussels sprouts, trimmed and thinly sliced
  • ¼ cup grated Parmesan
  • ½ cup homemade or store-bought croutons, crushed into crumbs

For the dressing:

  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice
  • ? cup mayonnaise
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  2. In another bowl, whisk all dressing ingredients until creamy.
