These jam-filled sandwich cookies are buttery, crisp, and traditionally dusted with powdered sugar. Made with ground nuts in the dough, they’re beautiful and rich with holiday charm.
Ingredients (makes 20 sandwich cookies):
1 cup butter
1/2 cup sugar
2 egg yolks
1 tsp vanilla
2 cups flour
1 cup ground almonds or hazelnuts
Raspberry or apricot jam
Powdered sugar for dusting
Instructions:
Cream butter and sugar, add yolks and vanilla.
Mix in flour and nuts. Chill 1 hour.
Roll, cut into shapes with center cut-outs on half.
Bake at 350°F for 10–12 minutes. Cool, fill, and dust with sugar.
