Ingredient (for 6 servings):

  • 1½ cups orzo pasta
  • 1 (10 oz) package fresh spinach
  • 1 cup crumbled feta cheese
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup chopped fresh dill or parsley
  • 1 tsp lemon zest
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 350°F. Cook orzo until al dente; drain.
  2. Sauté spinach in a dry pan until wilted.
  3. In a bowl, whisk eggs, milk, herbs, lemon zest, salt, and pepper. Stir in orzo, spinach, and feta.
