Ingredient (for 6 servings):
1½ cups orzo pasta
1 (10 oz) package fresh spinach
1 cup crumbled feta cheese
1/2 cup milk
2 eggs
1/4 cup chopped fresh dill or parsley
1 tsp lemon zest
Salt and pepper, to taste
Instructions:
Preheat oven to 350°F. Cook orzo until al dente; drain.
Sauté spinach in a dry pan until wilted.
In a bowl, whisk eggs, milk, herbs, lemon zest, salt, and pepper. Stir in orzo, spinach, and feta.
