Tzimmes or honey-glazed carrots

This delicious traditional dish is made of sliced carrots braised in a honey glaze. The honey symbolizes "sweetness" after all the hard efforts from the past year and the carrots "more" of good things, be them blessings, wealth, good deeds, etc. for the year ahead. To make this recipe, heat some oil in a saute pan, and cook the carrots with the juice of 1 orange, 1 piece of finely grated ginger, 1 tablespoon honey and 2/3 cup water. Bring to a boil, reduce the heat, cover and let simmer for 15 minutes. Once the carrots are tender, remove the cover, and increase the heat to reduce the cooking liquid and let the carrots finish caramelizing.
