When you're ready to cook the pasta, saute the onions in olive oil over medium heat for 5 minutes. Add the tomatoes, a touch of salt, and cook for about 15 minutes to reduce the sauce. Add the mushrooms 5 minutes before it's finished.

Meanwhile, boil a large pot of salted water. Add the tagliatelle, and cook it for about 1 minute and 30 seconds. The cooking time may need to be adjusted depending on the pasta's thickness and how long it's been drying. When ready, add the pasta to the sauce, toss gently to combine, and serve immediately with freshly cracked pepper and grated parmesan.
