Clean Up Ahead of Time

One of the biggest mistakes to make when inviting over guests is waiting until the last minute to clean up. We all lead busy lives, so it's tempting to put off tidying up for as long as possible, but it's also an easy way to build up your stress-level right before people arrive. Instead, try cleaning up little by little a few days before. Start in the dining room (especially if it's not often used) and move towards the living room. That way, the day of your party, you're not scrambling to clean, and your guests will feel more comfortable. As the weather gets warmer, dinner on the patio becomes more attractive–do the yard work the weekend before your dinner party.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
