Butter

Whether it's for health or stock reasons, butter is a pretty easy ingredient to replace. In baked goods or for savory recipes, you may sub in ghee and coconut oil in equal quantities. Applesauce is another good option (1:1 ratio), but you might want to reduce the sugar content of the recipe. Other suitable substitutions for 1 cup butter include: 3/4 cup olive oil, 1 cup avocado, 1 cup mashed banana, 1 cup full-fat Greek yogurt, 1 cup nut butter (this will increase fat and calories), or 3/4 cup pumpkin puree. Margarine or vegetable shortening could work, too, but they're much less healthy options.
