Placement is key

If you bought a bone-in rib, make sure to place the meat bone side down in the roasting pan. If there’s one side of the meat that’s fattier than the rest, be sure to put the fatty side on the top (so that it can slowly drip down as it melts and infuse the meat with its deliciousness).
