Combine all of the ingredients into a bowl, and mash together until smooth

- 1/2 of a jalapeno pepper, seeded, and minced
- 1/4 of a red onion, finely chopped
- 1/4 teaspoon of adobo sauce, or to taste
- 2 heaping tablespoons of cilantro, finely chopped
- 1/4 of a lime, juiced
- 1/4 teaspoon salt

Caribbean Chicken and Rice with Black Beans

Preheat oven to 350. Prepare rice according to package directions
- 1 (10oz) pkg yellow rice mix
- 1 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 chopped carrot
- 1 tbsp olive oil
- 2 cups cubed cooked chicken
- 1 (15oz) can black beans, drained
- 1(10oz) can diced tomatoes and green chiles, undrained
- 2 cups (8oz) grated Monterrey Jack cheese
