Crispy Potato Roast
By gordanas
Preheat oven to 375 degrees
- 3 tablespoons butter, melted
- 3 tablespoons extra-virgin olive oil
- 10 - 12 russet potatoes, peeled
- Kosher salt
- 1 small onion or 4 shallots, peeled and sliced very thin
- 1/2 teaspoon red pepper flakes (optional)
- 4 - 6 fresh thyme sprigs
- About 3 ounces pancetta, cubed
Spicy Hawaiian Teriyaki Chicken Rice Bowl

FOR THE RICE: Combine all ingredients in a rice cooker
- Rumbi Rice:
- 2 1/2 cups water
- 1 (14oz) can coconut milk (about 1 1/2 cups; I used light coconut milk)
- 1/2 Tbsp sugar
- 2 cups long grain white rice
- 1 (15oz) can red beans, drained and rinsed
- Spicy Hawaiian Teriyaki Sauce:
- 3/4 cups Mr. Yoshida’s teriyaki sauce (found in the grocery store by the BBQ sauces; I actually used Kikkoman Original Teriyaki Sauce.)
- 1 tsp soy sauce
- 2 tsp chili garlic sauce (in the Asian section of the grocery store; I used the one in the clear plastic jar with the green lid.)
- 1 tsp fresh ginger
- pinch of salt
- 1 Tbsp of brown sugar
- 1 Tbsp cornstarch (if needed)
- 2 Tbsp COLD water (if needed)
- Vegetables & Chicken:
- 2 chicken breasts (about 2 cups, cubed)
- Salt & Pepper
- 1 Tbsp canola oil
- 4 carrots, peeled and grated (approximately 1 1/2 cups)
- 3 celery stalks, washed and sliced (approximately 1 1/2 cups)
- 1 zucchini, chopped into small cubes (approximately 1 1/2 cups)
- 1 1/2 cups chopped broccoli florets (approximately 1/2-3/4 large head of broccoli)
Chocolate Caramel Shortbread Bars

Whisk together 1 stick butter with ¼ cup sugar until smooth
- 1¼ cups flour
- 2½ sticks butter, divided
- ¾ cup sugar, divided
- 1 ¾ cup sweetened condensed milk
- ¼ cup milk chocolate chips
- ¼ cup white chocolate chips
- 1 tablespoon milk
- 3 tablespoons light corn syrup
Dark Chocolate Chip Peanut Butter Cookies

Preheat oven to 350°F. Whisk flour, baking powder, baking soda, and salt in a large bowl
- 1 2/3 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup powdered sugar
- 1/2 cup dark brown sugar
- 2 sticks unsalted butter, room temperature
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup dark chocolate chips or semi-sweet chocolate chips
Mini Apple Pies

Start by cutting up eight cups of apples into small 1/2in bits
- 8 cups of apples
- 12 tablespoons of flour
- 1 1/2c of sugar
- 4 heaping teaspoons of cinnamon
- 1/4-1/2 teaspoon of nutmeg (depending on how much you like nutmeg, you could also leave it out)
- 4 tablespoons of chilled butter cut into 24 equal portions.
- 2 boxes of Pilsbury pie crusts (four chilled NOT frozen crusts)
Minty Chocolate Mousse Brownies

Heat oven to 350 degrees. Grease bottom only of a10-inch spring-form pan with shortening
- 1 Box Betty Crocker Original Supreme brownie mix (with chocolate syrup pouch)
- 1/3 c. water
- 1/3 c. vegetable oil
- 2 eggs
- 3/4 c. whipping cream
- 1 c. Andes Creme de Menthe Baking Chips
- 3 eggs
- 1/3 c. sugar
- Topping: 1/3 c. Andes Creme de Menthe baking chips + a handful more for sprinkling over the top.
Chocolate Eclair Dessert

Line the bottom of a 9x13-inch pan with graham crackers
- 2 individual packages graham crackers
- 2 (3 ounce) packages instant vanilla pudding mix
- 3 cups milk
- 1 (8 ounce) container frozen whipped topping, thawed
- 1 (16 ounce) package prepared chocolate frosting
Chocolate Italian Love Cake

Preheat your oven to 350*F and spray a 9×13 inch pan with nonstick spray
- 1 package chocolate cake mix (I recommend using Betty Crocker brand), and the ingredients needed to make the cake according to the package
- 2 lbs. ricotta cheese
- 4 eggs
- ¾ cup sugar
- 1 tsp. pure vanilla extract
- 1 (5.1 oz.) package instant chocolate pudding mix
- 1 cup cold milk
- 8 oz. Cool Whip
Ultimate S'More Cake

- 2 sticks unsalted butter
- 2 1/4 cups sugar
- 4 large eggs
- 1 1/4 cups Double-Dutch Dark Cocoa or Dutch-process cocoa
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon espresso powder (I used instant coffee)
- 1 tablespoon vanilla extract
- 1 1/2 cups All-Purpose Flour
- 2 cups chocolate chips (I used semi sweet)
- Cheesecake
- 1 1/4 pounds cream cheese (20 oz), room temperature
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- Chocolate Frosting
- 6 ounces unsweetened chocolate, melted and cooled
- 4 1/2 cups confectioners’ sugar (no need to sift)
- 3 sticks (12 ounces) unsalted butter, at room temperature
- 6 tablespoons milk
- 1 tablespoon vanilla extract
- Marshmallow Filling
- 1 jar (7 oz) marshmallow fluff
- 1 stick butter, room temperature
- 1 cup powdered sugar
- 1 tbsp vanilla extract
