SWEET HAWAIIAN CROCKPOT CHICKEN

Combine all together, cook on low in Crock-pot 6-8 hours
- 2lb. Chicken tenderloin chunks
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/3 cup soy sauce

Loaded Baked Potato & Chicken Casserole

Preheat oven 500F In a large bowl mix Olive Oil, Salt, Pepper, Paprika, Garlic Powder & Hot Sauce Cube the potat
- 2 lbs chicken breast
- 8 potatoes
- 1/3 cup Olive Oil
- 1 1/2 tsp salt
- 1 TBS fresh Ground Pepper
- 1 TBS Paprika 2 TBS Garlic Powder
- 6 TBS Hot Sauce
- {Toppings}
- 2 cups Shredded Cheese
- 1 cup crumbled Bacon
- 1 cup diced Green Onion
Pepperoni Pizza Dip

- 1 – 8oz package cream cheese softened
- 1/2 cup sour cream
- 1 cup freshly grated parmesan cheese – divided
- 2 cups freshly grated mozzarella cheese – divided
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried basil
- 1 cup pizza sauce
- Pizza toppings like pepperoni, mushrooms, green peppers etc
- 1/2 teaspoon Italian Seasoning for garnish
Marinated Cucumbers, Onions, and Tomatoes

Combine ingredients in a large bowl and mix well
- 3 medium cucumbers, peeled and sliced 1/4 inch thick
- 1 medium onion, sliced and separated into rings
- 3 medium tomatoes cut into wedges
- 1/2 cup vinegar
- 1/4 cup sugar
- 1 cup water
- 2 teaspoons salt
- 1 teaspoon fresh coarse ground black pepper
- 1/4 cup oil
Baked Sweet and Sour Chicken

Start by preheating your oven to 325 degrees
- The chicken coating:
- 3-4 boneless chicken breasts
- salt + pepper
- 1 cup cornstarch
- 2 eggs, beaten
- 1/4 cup canola oil
- The sweet and sour sauce:
- 3/4 cup sugar
- 4 tbs ketchup
- 1/2 cup distilled white vinegar
- 1 tbs soy sauce
- 1 tsp garlic salt
Biscuit Breakfast Bake

Mix your eggs and milk in a large bowl
- 5 eggs
- 1/4 cup milk
- 16 oz refrigerated breakfast biscuits (I used the Pillsbury flakey kind) 4 scallions (green onions, spring onions, whatever you prefer to call them)
- 1 cup shredded extra sharp cheddar cheese
- If you’re into the meats – cooked center cut bacon or cooked sausage
- 11×17 pan, sprayed with cooking spray
- (Note: I think a 9×13 works better, but it might need to bake a little longer)

- 1 cup yellow cake mix
- 1 cup confectioners’ sugar
- 1/2 stick (1/4 cup) butter or margarine, cut into small squares
- 1/4 cup milk or 1/8 cup soy milk
- sprinkles (optional)

- 3/4 cup flour
- 2 tablespoons cornstarch
- 1/4 teaspoon baking soda soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup water
Chicken Rollatini

Preheat oven to 450 deg. Place chicken breast in Ziploc bag and pound to about 1/4 inch thick
- 2 Boneless Skinless Chicken Breasts
- 3/4 cup Italian Seasoned Bread Crumbs
- 1/2 cup grated parmesan cheese
- 1/2 cup grated mozzarella
- 2 eggs, beat and set aside
- 3/4 cup fresh chopped spinach (can use frozen,
- make sure it is thawed and dry)
- 6 TBS Ricotta cheese
- Olive Oil
- 1 1/2 cup Favorite Marinara sauce
- (Or you can make your own with 2 cans crushed tomatoes,
- 3 diced garlic cloves and 1/4 cup olive oil and salt to taste
