mix all ingredients together in a large pot for 3 hours until thick

- 2 cup grated zuchinni
- 1 1/2 cup sugar
- 1/2 cup oil
- 2 tsp. vanilla
- 2 cup flour
- 1 tsp. salt
- 1 1/2 tsp. baking soda
- 1/2 cup cocoa
- 1/2 cup chopped nuts
chicken cassarole

Wrap chicken with bacon. Place in a 9 x 13 dish pan
- 6 - 12 boneless chicken thighs
- 6 - 12 slices bacon
- 4 potatoes
- 6 carrots

Bacon-Wrapped Green Bean Bundles

Preheat an oven to 350 degrees F
- 3/4 pound fresh green beans, ends trimmed
- 4 bacon strips
- 3 tbsp. butter, melted
- 1/4 c. packed brown sugar (reserve 1 tbsp.)
- 1/4 tsp. garlic salt
- 1/8 tsp. soy sauce

Cake: Mix all ingredients in a bowl, mixing each time you add an ingredient
- Cake:
- 2 c. sugar
- 1 1/4 c. vegetable oil
- 3 eggs
- 2 c. flour
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 2 tsp. salt
- 1 small baby food jar each of apricots, applesauce and carrots
- 1 c. favorite nuts, optional
- Frosting:
- 1/3 c. soft butter
- 3 oz. cream cheese
- 1 tsp. vanilla
- 1/2 lb. powdered sugar
Italian Chicken Cassarole

cook rice according to package directions
- 2 (3.5 oz.) bags quick cooking rice
- 1 lb. chicken breast cut into cubes
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 tbsp. olive oil divided
- 1 (8oz.) pkg. sliced fresh mushrooms
- 1 (10-1/4 oz.) can reduced fat cream of chicken soup
- 1/2 (8oz.) container sour cream
- 1/2 tsp. Italian seasoning
- 1(28oz) can diced tomatoes with basil, garlic and oregano undrained
Peach Cobbler

- Cobbler Filling:
- 4 c. peeled and sliced fresh peaches
- 3/4 c. brown sugar
- 1 tsp. cinnamon
- 1 tsp. vanilla
- 1 Tbsp. flour
- Cobbler Crust:
- 1 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 3 Tbsp. brown sugar
- 4 Tbsp. unsalted butter, cut into small pieces
- 2/3 c. buttermilk
- Topping:
- 1 Tbsp. brown sugar

- 1 cup chopped pecans divided
- 1 (18.25) package spice cake mix
- 1-1/2 cups milk
- 1/2 cup canola oil
- 3 large eggs
- 2 cups shredded zucchini (medium Zucchini)
Rigatoni with Italian Sausage...

- 1 16 oz. pkg. rigatoni pasta
- 1 lb. ground Italian pork sausage
- 2 cloves garlic, crushed
- 1 small onion, diced
- 2 Tbsp. chopped fresh sage leaves, or 1 Tbsp. dried sage leaves
- 1/4 tsp. salt
- 1 14.5 oz. can Italian-style stewed tomatoes
- 1 c. heavy whipping cream
- 1/2 c. parmesan cheese, shredded, plus additional cheese for serving
Simple Perfect Enchiladas

For the sauce: In a saucepan over medium-low heat, combine the canola oil and flour
- Sauce:
- 2 Tbsp. canola oil
- 2 Tbsp. all-purpose flour
- 1 28 oz. can enchilada or Mexican red sauce
- 2 c. chicken broth
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- Meat:
- 1 lb. ground beef
- 1 medium onion, finely chopped
- 1/2 tsp. salt
- The Rest:
- Canola oil for frying
- 10 to 14 corn tortillas
- 2 4 oz. cans diced green chilies
- 1 c. chopped green onions
- 1/2 c. chopped black olives
- 3 c. grated sharp cheddar cheese
- cilantro for garnish
