10 Minute Smothered Chicken

Flatten chicken to 1/4 inch thickness; sprinkle with garlic powder, and salt
- 4 boneless, skinless chicken breast halves
- 1 tsp garlic powder (or to taste)
- 1 tsp salt (or to taste)
- 1 tbsp vegetable oil
- 41/2 ozs sliced mushrooms (drained)
- 1 cup mexican blend cheese (shredded)
- 1/2 cup green onion (chopped)
- 1/2 cup bacon bits
Bacon Chicken

Cook bacon in 12" skillet until crisp, about 4-6 minutes
- 6 slices bacon
- 1 Tbsp. butter
- 1 Tbsp. olive oil
- 6 boneless, skinless chicken breasts
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1-1/2 cups shredded cheddar or colby cheese
Cheesy Chicken Enchiladas

Preheat oven to 350°. Combine first 9 ingredients in a large bowl
- 2 1/2 cups chopped cooked chicken breast
- 2 cups (8 ounces) preshredded reduced-fat 4-cheese Mexican blend cheese
- 1 2/3 cups plain low-fat yogurt
- 1/3 cup butter, melted
- 1/4 cup chopped onion
- 1 teaspoon minced garlic
- 1/4 teaspoon freshly ground black pepper
- 1 (10 3/4-ounce) can condensed reduced-fat, reduced-sodium cream of chicken soup (such as Healthy Request), undiluted
- 1 (4.5-ounce) can chopped green chiles, drained
- 8 (8-inch) flour tortillas
- 1 tablespoon canola oil
- Cooking spray
- 1/2 cup (2 ounces) finely shredded reduced-fat sharp cheddar cheese
- 1/4 cup chopped green onions
Quick Barbecue Chicken

- 1 teaspoon sugar
- 1 teaspoon chili powder
- 2 teaspoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder

- 1/8 teaspoon ground ginger
- 1/8 teaspoon ground cinnamon

Chicken with Garlic

Remove and discard giblets and neck from chickens
- 2 (3-pound) whole chickens
- 1 tablespoon butter
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon salt

- 1 1/4 cups fat-free, less-sodium chicken broth

Crock Pot Taco Soup

Cook meat and drain
- 1 (16 ounce) can pinto beans
- 1 (16 ounce) can white beans or 1 (16 ounce) can kidney beans
- 1 (11 ounce) can niblet corn
- 1 (11 ounce) can Rotel tomatoes & chilies
- 1 (28 ounce) can diced tomatoes
- 1 (4 ounce) can diced green chilies
- 1 (1 1/4 ounce) envelope taco seasoning mix
- 1 (1 ounce) envelope hidden valley ranch dressing mix
- 1 lb shredded chicken, ground beef or 1 lb any meat
Cookie Dough Bars

In a large bowl, mix together butter and light brown sugar until light and fluffy (about 3 minutes)
- Cookie Dough:
- 1/2 c. unsalted butter, softened
- 3/4 c. packed light brown sugar
- 1 tsp. vanilla extract
- 2 c. all purpose flour
- 1 (14 oz.) can sweetened condensed milk
- 2 c. mini chocolate chips
- Glaze:
- 2 & 1/4 ounces unsalted butter
- 4 ounces dark chocolate
- 1 & 1/2 teaspoons light corn syrup
My Favorite Homemade Hot Chocolate

Break the chocolate into large chunks and blend in a food processor until mealy
- 3 1/2 ounces bittersweet chocolate
- 2/3 cups Dutch Process cocoa powder
- 3/4 cups powdered sugar
- 1/4 cup powdered coconut milk, powdered milk, or malted milk powder
- 1 pinch salt
- 2 teaspoons cornstarch
Crock Pot Pot Roast

Season the flour with the salt and pepper and pound the mixture into the meat with the edge of a plate
- 1/4 cup flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 5 pounds rump of beef (or other roast suitable for slow-cooking, such as chuck)
- 2 to 3 tablespoons fat or oil
- 2 onions, sliced, or 10 to 12 small onions, peeled
- 1 to 2 carrots, scraped and cubed
- Herbs and seasonings, as desired (we used bay leaf and thyme)
- 1 cup liquid (wine, bouillon, tomatoes, vegetable broth, etc.)
- Other vegetables, as desired (we used baby red potatoes)
