Grandma Cindy's Spinach and Potato Soup

Cook and stir bacon in 3 qt
- 2 slices cut up bacon
- 2 c. chicken broth or stock
- 1/4 c. finely chopped carrot
- 1/2 tsp dried thyme
- 1/2 tsp pepper
- 2 c. milk
- 1/4 lb. Italian sausage links cooked and sliced
- 1 medium chopped onion
- 2 c. diced potatoes
- 1/4 c. finely chopped celery
- 1 tsp salt
- 2 lb. fresh chopped spinach or kale
- 1/2 c. snipped parsley

This has been passed down thru at least 4 generations that I am aware of
- 3 cups flour
- 2 tsp salt
- 1/4 c. Crisco
- 2 eggs
- Ice water
- 4-5 cups cooked chicken meat coarsely chopped
- 64 oz chicken stock
- 2 carrots peeled and thinly sliced
- 2 stalks celery sliced
- 1 onion chopped
- 2 peeled and quartered potatoes
Grandma Cindy's Chicken Gnocchi Soup

In a large pot heat butter and oil over medium high heat
- 1 c. cooked and diced chicken breasts
- 2 TBS butter
- 2 TBS olive oil
- 1 qt. evaporated milk
- 2 c. chicken stock
- 1/2 c. chopped celery
- 1/4 c. flour
- 2 cloves minced garlic
- 1/2 c. shredded carrots
- 1 small diced onion
- 1 c. coarsely chopped fresh spinach or kale
- 1/2 tsp. dried thyme
- 1 package 16 oz. refrigerated gnocchi
Grandma Cindy's Amish Yum-A-Setta

Brown and drain ground beef and onions
- 2 lbs. ground beef
- 1 TBS brown sugar
- 1/4 onion chopped
- 1 can undiluted tomato soup
- 1 can cream chicken soup
- 16 oz. egg noodles
- 8 oz. cheese whiz
- Salt and pepper to taste

- 1 c. Bisquick and 1/4 c. water mixed
- 3/4 lb. ground beef
- Dry taco seasoning packet
- 1/2 c. water
- Sliced tomato
- 1/2 c. sour cream
- 1/4 c. Miracle Whip
- 1 TBS flaked onion
- 1 1/2 c. shredded cheddar cheese
- Plain Tortilla chips
Green Pea Pesto Crostini

Combine green peas, basil and olive oil in bowl of food processor and pulse 8 to 10 times till mixture is smooth
- 1 bag 8 oz frozen green peas thawed
- 1 cup fresh basil leaves
- 2 TBS extra-virgin olive oil
- 12 slices French bread baguette toasted
- 1/4 cup part skim ricotta cheese
- 1/4 tsp. freshly ground black pepper

Heat oven to 375. Cook noodles as directed on package, omitting salt
- 9 Lasagna noodles uncooked
- 4 cups hot mashed potatoes
- 1/2 cup Philadelphia Chive & Onion Cream Cheese Spread
- 6 green onions thinly sliced
- 2 cups Kraft Shredded Triple Cheddar Cheese with a touch of Philadelphia divided
Great Aunt Nancy's Spinach Cheese Enchiladas

- 2 green chopped onions divided
- 1 TBS margarine
- 1 pkg 20 oz frozen chopped spinach thawed and drained
- 14 oz Monterey Jack cheese shredded and divided
- 1 c. sour cream divided
- 1 can 10 oz enchilada sauce
- 8 corn tortillas

Heat oven to 400. Bring a large pot of lightly salted water to a boil and add pasta
- 1 box 12 oz. jumbo pasta shells
- 2 tsp olive oil
- 2 1/2 c. chopped broccoli
- 1 c. shredded carrots
- 1 small onion chopped
- 1 clove garlic minced
- 1 box 10 oz frozen leaf spinach thawed and coarsely cut
- 1/4 c. chopped fresh basil
- 1 cup lowfat small curd cottage cheese
- 2 TBS grated parmesan cheese
- 1/4 tsp each salt and pepper
- 1 1/2 c. marinara sauce
- 1/2 c. shredded part-skim mozzarella cheese

- 3/4 c. onion and garlic salad croutons
- 1 small onion finely chopped
- 1/4 c. finely chopped sweet red pepper
- 2 oz. thinly sliced prosciutto chopped optional
- 1 garlic clove minced
- 2 tsp olive oil
- 2 c. fresh baby spinach
- 1/3 c. flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 1/4 c. milk
- 1 egg yoke beaten
- 6 egg whites
- 1/4 tsp cream of tartar
- 1/4 c. shredded Italian cheese blend
