Red Beet Eggs

  • 12 eggs, one 16 oz jar pickled beets, 1/4 cup white sugar, 3/4 cup apple cider vinegar, salt and pepper to taste.

Step 1

Boil the eggs and drain.

Step 2

Mix all the other ingredients together in a large glass jar, then carefully add the eggs.

Step 3

Put in fridge to cool and set.


Wait at least 120 minutes or more before serving the eggs. The longer they set in the fridge, the darker and yummier they'll be. Optimum: Let sit in fridge 1 or 2 days, so beet juice goes all the way to center of eggs.
