These are sweet and salty. My husband needed something for breakfast on the go and this is the resulting recipe I came up with.

  • 2 cups rolled oats
  • 1 cup granola cereal
  • 1/2 cup ground flaxseed
  • 1 cup sweetened coconut, shredded
  • 1/2 cup chocolate chips
  • 1 cup AP flour
  • 1 tsp baking powder
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 tbsp vegan margarine, soft
  • 1/2 cup vanilla yogurt or more
  • 1 tbsp vanilla extract
  • 1 tsp almond extract
  • 1 tsp banana extract
  • 1 tbsp salt

Step 1

Combine dry ingredients. Combine wet ingredients. Mix wet ingredients into dry ingredients. The batter should be very thick. Add more yogurt as needed to get the desired consistency.

Step 2

Spread batter evenly into an oiled casserole dish. Sprinkle salt across the top.

Step 3

Bake 350*F for 30-45 minutes until no longer wet in the middle.
