- 1 onion
- 1/2 lb fresh baby spinach leaves, plus more to serve
- 1/2 cup ricotta
- 1/2 cup heavy cream
- 3/4 cup freshly grated parmesan
- 2 tbsp olive oil
- Salt and pepper
