Creamy Ricotta-Walnut Pasta

Ingredients (4 servings):

  • 3/4 lb linguine (or other pasta)
  • 1 1/2 cups walnuts, shelled, plus more to serve
  • 1 onion
  • 1/2 lb fresh baby spinach leaves, plus more to serve
  • 1/2 cup ricotta
  • 1/2 cup heavy cream
  • 3/4 cup freshly grated parmesan
  • 2 tbsp olive oil
  • Salt and pepper
