You might be disappointed or even surprised to learn there is no actual cream in authentic pasta carbonara. Instead, this dish takes on its signature creamy texture from the simple combo of cheese and eggs that gets combined with the cooked pasta immediately. Also, the traditional recipe calls for guanciale, which is a specialty Italian cured meat often used in pasta recipes. If you can't find it, pork jowel or regular bacon is fine.
