Stop Throwing Out Your Leftover Parmesan Rinds. Here's Why.

Add them to pasta sauces

When cooking up homemade pasta sauce (tomato, marinara, bolognese, etc.), add a parmesan rind while it's simmering. As with soups and stews, it helps yield a richer, more flavorful sauce. The longer the rind steeps, the more flavor you can get out of it, so make sure you add it at the beginning, and don't hesitate to let it simmer for hours. Discard the rind when the sauce is ready to serve. Doing this also means you don't have to load up on the parmesan when serving, as the pasta sauce will already be infused with delish, cheesy flavor.
