Japan - Tamagoyaki

Commonly served at breakfast, this Japanese-style rolled omelet has a subtly sweet taste and custard-like texture. It's made by progressively cooking thin layers of beaten eggs in a pan and rolling them up between each successive layer. It may be seasoned with soy sauce and sugar, mirin, sake or even dashi (a type of Japanese stock). Ideally, it should be made in a special tamagoyaki pan, but you can easily prepare it in a regular frying pan, too.
