Set Out the Right Knives

On your cheese platter, consider setting out a separate knife for each cheese to prevent the flavors from mixing. This also helps because cheeses do not all have the same consistency: a cheese knife with a double prong at the end can cut and pick up cheese pieces, while an almond-shaped knife is good for hard cheeses such as Parmesan, and a knife with holes in the blade is good for soft cheeses, as it keeps them from sticking to the blade.
