Strawberry Mousse

This airy strawberry mousse is perfect is you’re looking for a light yet sweet way to finish off your meal.

Ingredients (for 4 servings): 

  • 1 cup heavy cream
  • 2 gelatin sheets
  • 10 oz. strawberries
  • 1 tsp vanilla sugar
  • 8 oz. mascarpone
  • 2 tbsp powdered sugar
  • Optional: Popcorn, fresh strawberries to serve


Instructions:

  1. Add the heavy cream to a bowl, and firm up in the freezer for 10 min.
  2. Soak the gelatin in cold water. Wash and hull the strawberries.
  3. Add the strawberries and vanilla sugar to a saucepan, and simmer over medium heat for 5 min., stirring regularly. Using an immersion blender, finely puree the ingredients. Drain the gelatin and add to the puree. Stir to combine.
  4. Pour the mixture into a jar and let cool.

  5. Beat the heavy cream with a whisk or electric hand mixer until stiff peaks form, then delicately fold in the mascarpone and powdered sugar until combined.

  6. Carefully spoon the strawberry mousse into 4 individual serving glasses. Refrigerate for at least 3 hours before serving.

  7. Garnish with more fresh strawberries and popcorn, if desired.
  8. Enjoy!

Ingredients

  • 7-9 medium-sized strawberries
  • 1 puff pastry
  • 1 chocolate bar
  • 1 egg yolk

Method

  1. Preheat oven to 350°F.
  2. Cut the strawberries into halves.
  3. Dust some flour on a flat surface and spread your puff pastry out on top, smoothing it into a rectangle shape if necessary.
  4. Place the bar of chocolate in the center, then top with a layer of strawberry halves.
  5. Using a pizza cutter or a knife, slice the edges of the puff pastry into strips that can be wrapped over the chocolate and strawberries. Starting with the flap at the top, fold over each strip in a slightly diagonal direction so that they resemble a braid.
  6. Brush the braid with a beaten egg yolk so that it covers the entire visible surface.
  7. Sprinkle almond slivers on top.
  8. Bake for 20-22 minutes.
  9. Give the braid a few minutes to cool down, then cover with a dusting of powdered sugar.
  10. Serve and enjoy!
