Strawberry Charlotte Cake

This delicious French cake combines ladyfingers, mascarpone and fresh strawberries. It's a classic and impressive treat that's sure to please.

Ingredients:

  • 1 cup mascarpone 
  • 3 eggs
  • 2/3 cup + 2 tbsp powdered sugar
  • 1 1/2 tsp vanilla sugar
  • 12.5 oz strawberries
  • 1 1/4 cups orange juice 
  • 1/3 cup strawberry syrup
  • 40 ladyfingers


Preparation:

  1. Beat the mascarpone with the 3 egg yolks, 2/3 cup powdered sugar and vanilla sugar. Beat the egg whites until stiff and combine with the remaining 2 tbsp of powdered sugar. Carefully fold the beaten egg whites into the mascarpone mixture.
  2. Wash and dry the strawberries. Set aside a handful of strawberries for the decoration. Cut the remaining strawberries into small cubes.
  3. In a deep plate, combine the orange juice and strawberry syrup. Briefly dip the ladyfingers in the mixture , then place them on the bottom of a springform pan. Then arrange the remaining ladyfingers vertically around the inside of the springform pan, as pictured.
  4. Spread a layer of mascarpone onto the ladyfingers covering the bottom of the pan. Top with a layer of strawberry cubes. Add another layer of mascarpone, followed by another layer of cubed strawberries. Finish with a last layer of mascarpone. Smooth the surface neatly and store in the fridge for at least 10 hours.
  5. When ready to serve, unmold the cake and decorate with the reserved whole strawberries. To keep with French tradition, tie a ribbon around the outside of the standing layer of ladyfingers.

Ingredients

  • 7-9 medium-sized strawberries
  • 1 puff pastry
  • 1 chocolate bar
  • 1 egg yolk
  • Almond slivers
  • Powdered sugar

Method

  1. Preheat oven to 350°F.
  2. Cut the strawberries into halves.
  3. Dust some flour on a flat surface and spread your puff pastry out on top, smoothing it into a rectangle shape if necessary.
  4. Place the bar of chocolate in the center, then top with a layer of strawberry halves.
  5. Using a pizza cutter or a knife, slice the edges of the puff pastry into strips that can be wrapped over the chocolate and strawberries. Starting with the flap at the top, fold over each strip in a slightly diagonal direction so that they resemble a braid.
  6. Brush the braid with a beaten egg yolk so that it covers the entire visible surface.
  7. Sprinkle almond slivers on top.
  8. Bake for 20-22 minutes.
  9. Give the braid a few minutes to cool down, then cover with a dusting of powdered sugar.
  10. Serve and enjoy!
