Strawberry Black Forest Cake

Ingredients:

For the cake

  • 1 1/2 sticks salted butter
  • 1 2/3 cup dark chocolate
  • 2 1/3 cup all-purpose flour
  • 1 2/3 cup superfine sugar
  • 3 1/2 tbsp cocoa powder
  • 1 tsp baking soda
  • 1 pinch of salt
  • 2 eggs
  • 3/4 cup plain yogurt
  • 1/2 cup boiling water

For the assembly

  • 1 lb. strawberries
  • 1/3 cup strawberry jelly
  • 4 tbsp strawberry syrup
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • Optional: fresh mint leaves to garnish


Instructions:

  1. Preheat the oven to 350°F. Lightly grease and line 3 x 8" cake tins with parchment paper. Add the butter and roughly chopped dark chocolate to a small saucepan and heat over low until melted.
  2. Combine the flour, sugar, cocoa powder and baking soda in a mixing bowl. Season with a pinch of salt and mix well to combine. In another bowl, whisk together the eggs and yogurt. Add the melted butter and chocolate mixture to the dry ingredients with the 1/2 cup of boiling water. Using an electric whisk, beat the ingredients until the batter is completely smooth.
  3. Evenly divide the batter between the 3 prepared cake tins and bake for 25 min. in the preheated oven. After 20 min., you can switch the positions of the tins (between the two shelves). Check for doneness by inserting a toothpick into each cake. It should come out clean. If not, return to the oven and bake for a few more minutes. Poke several holes into the surface of each cake and drizzle over the strawberry syrup. Set aside and let cool.
  4. Wash and hull the strawberries and cut half of the strawberries into thin slices. Cut the remaining strawberries in half.
  5. In a bowl, combine the heavy cream with the powdered sugar and whisk until soft peaks form. Spread each cake with a layer of the cream. Top two of the cakes with sliced strawberries, then stack them on top of each other. Top with the third cake and garnish with the halves strawberries and fresh mint leaves, if desired.

Method

  1. Preheat oven to 350°F.
  2. Cut the strawberries into halves.
  3. Dust some flour on a flat surface and spread your puff pastry out on top, smoothing it into a rectangle shape if necessary.
  4. Place the bar of chocolate in the center, then top with a layer of strawberry halves.
  5. Using a pizza cutter or a knife, slice the edges of the puff pastry into strips that can be wrapped over the chocolate and strawberries. Starting with the flap at the top, fold over each strip in a slightly diagonal direction so that they resemble a braid.
  6. Brush the braid with a beaten egg yolk so that it covers the entire visible surface.
  7. Sprinkle almond slivers on top.
  8. Bake for 20-22 minutes.
  9. Give the braid a few minutes to cool down, then cover with a dusting of powdered sugar.
  10. Serve and enjoy!
