Delicious Cold Salads to Enjoy During Summer

Fresh Shrimp Salad

There's no dish quite as summery as this one! This stuffed avocado salad works perfectly as a starter or light dinner. Why not try it out on any guests you have visiting,

Ingredients (for 4 people):

  • 5 ripe avocados
  • 3-4 large shrimps (peeled)
  • 1 medium mango
  • 4 avocados
  • Juice of 1 lime
  • Salt and pepper (for seasoning)
  • 4 tbsp mayonnaise
  • 1 tbsp Sriracha sauce

Instructions:

  1. Cut the avocados in half. Take one of them, and cut the flesh into cubes. For the remaining three, empty the center with a spoon, cut that pulp, and put in a bowl. Drizzle with lime juice to prevent oxidation. Keep the hollowed avocado skins are we'll use them later.
  2. Cut the mango into small cubes. Slice the shrimp,  and finely slice the cilantro. 
  3. Put the mango, shrimp, and cilantro in the bowl with the avocado. Add the mayonnaise, hot sauce, and salt and pepper.

  4. Mix the avocado pulp with the mango, shrimp and cilantro in a bowl. Add the mayonnaise, hot sauce and salt and pepper.
  5. Arrange the hollowed avocado skins on a plate, and fill with the salad you just prepared. It's that simple!

  • Carrot
  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
