Rustic Tomato Pie

Perk up your plate with this super easy tomato pie! It makes for the perfect summer lunch - ideally when sat outside with friends enjoying the sunshine.

Ingredients (for 4 people):

  • Shop-bought Dough for single-crust pie
  • 1-3/4 pounds mixed tomatoes, seeded and cut into 1/2-inch slices
  • 1/4 cup thinly sliced scallions (chopped)
  • 1/2 cup mayonnaise
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp minced fresh basil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp grated Parmesan cheese

Instructions:

  1. Preheat the oven to 400°F. 
  2. Roll dough to a 1/8-inch thick circle. Put in a 9-inch pie plate and trim the crust.
  3. Put half of the tomatoes and the chopped scallions in the crust. Combine the mayonnaise, cheddar cheese, basil, and salt and pepper; spread over the tomatoes. 
  4. Fold the edge of the crusts over the filling, so that you have a thick, pleasted edge around the sides of the pie. Sprinkle with Parmesan cheese.
  5. Bake for 35 mins. until the crust is golden and the tomato mixture is bubbly. 
  6. Allow to stand for 10 mins. before cutting.

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
