Chicken Parmesan

A quick and delicious recipe to satisfy a craving for Italian food — and who doesn't crave Italian food?

Ingredients (for 4 people):

  • 4 chicken breasts
  • 2/3 jar of arrabiata or basil sauce
  • 1 cup shredded mozzarella cheese
  • 1 egg
  • Bread crumbs (for breading)
  • Cornstarch (for breading)
  • Salt and pepper (to taste)
  • Fresh basil (for garnish)

Instructions:

  1. Take each chicken breast and flatten it with a meat mallet or if you don't have one, the jar of sauce (just make sure it's full!)
  2. Beat the egg and place the bread crumbs on a seperate plate with the cornstarch.
  3. Heat a glug of olive oil in a skillet. Season each breast, dip it in the starch, then in the egg and finally in the breadcrumbs, making sure they are completely covered. Cook on both sides, 5 min. per side.
  4. If your frying pan is oven safe you can continue to use it, otherwise transfer the breasts to a serving dish. Pour the sauce on top and sprinkle with cheese. Cook in the oven on grill mode for 8 to 10 min. and serve with fresh basil.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
