Chickpea Carbonara

If you like pasta but don't want to be eating the same thing all the time, and are looking for other nutritious options, chickpeas are an excellent choice. Because of their mild flavor, they combine perfectly with typical Italian sauces.

Ingredients (for 4 people):

  • 4 cups of cooked chickpeas (can be canned)
  • 8 slices of bacon
  • 1 small onion
  • 3 egg yolks
  • 1/2 cup of Parmesan cheese (for the sauce)
  • Parmesan to (to taste)
  • Fresh herbs to (to taste)

Ingredients:

  1. Finally cut the onion and sauté in a glug of oil until it changes color.
  2. Add the diced bacon and cook for 3 min. longer, until golden brown.
  3. Add the chickpeas, lower the heat to medium and continue cooking for 10 more min.
  4. Meanwhile, mix the egg yolks with the Parmesan.
  5. Turn off the heat, transfer the chickpeas to a bowl and pour the carbonara sauce, stirring immediately.
  6. Serve with more cheese sprinkled on top and fresh herbs.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
