Rosemary Grapefruit Refresher

Bright, zesty, and herbaceous, this mocktail balances the tartness of ruby red grapefruit juice with the subtle earthiness of rosemary-infused simple syrup. Topped with sparkling water and garnished with a fresh rosemary sprig, it’s a stunningly simple drink that’s perfect for stilling to your New Year's goals. For a sweeter version, add a splash of orange juice or a drizzle of honey.

Ingredients (serves 1):

  • 2 oz freshly squeezed ruby red grapefruit juice (about 1/2 large grapefruit)
  • 1 oz rosemary-infused simple syrup* 
  • 3 oz sparkling water, chilled
  • Ice cubes
  • 2-3 spring fresh rosemary, for the syrup 
  • 1 sprig fresh rosemary for garnish

Instructions:

  1. Fill a glass with ice cubes and add the grapefruit juice and rosemary-infused simple syrup. Stir to combine.
  2. Top with chilled sparkling water and gently stir again.
  3. Garnish with a sprig of fresh rosemary, gently rubbing it between your fingers before placing it in the glass to release its aroma.


*Combine 1/4 c sugar (or a natural sweetener) and 1/4 c water in a saucepan over medium heat. Add 2-3 sprigs of fresh rosemary and simmer until the sugar dissolves. Let cool, then strain out the rosemary. Store in the refrigerator for up to 2 weeks.
