Black Forest Fudge Brownie

This single-serve black forest brownie combines the richness of chocolate with the tart sweetness of cherries for a perfect balance. The scoop of creamy ice cream makes it irresistible—an elegant and satisfying dessert just for you. Swap fresh cherries with frozen ones if they’re out of season, but thaw and pat them dry first.

Ingredients (serves 1):

  • 2 tbsp unsalted butter
  • 2 tbsp semi-sweet chocolate chips
  • 3 tbsp granulated sugar
  • 1 tbsp cocoa powder
  • 2 tbsp all-purpose flour
  • Pinch of salt
  • 1/4 tsp vanilla extract
  • 1 tbsp milk (or non-dairy alternative)
  • 2–3 fresh cherries (pitted and halved)
  • Vanilla ice cream (for serving)
  • Chocolate shavings or a cherry on top (optional garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a small ramekin or oven-safe dish.
  2. In a microwave-safe bowl, melt the butter and chocolate chips together in 15-second intervals, stirring each time until smooth.
  3. Stir in the sugar, cocoa powder, and vanilla extract. Add the milk and mix until smooth. Fold in the flour and salt until just combined.
  4. Gently fold in the fresh cherry halves, reserving a few for topping.
  5. Pour the batter into the prepared ramekin. Top with the reserved cherries. Bake for 18–20 min. or until the edges are set but the center remains slightly gooey.
  6. Let the brownie cool for a few minutes, then top with a scoop of vanilla ice cream. Add chocolate shavings or a cherry on top for garnish, if desired.

Method

  1. Place cream cheese (e.g. Philadelphia) in a mixing bowl.
  2. Add powdered sugar.
  3. Beat ingredients together.
  4. Cut a lemon in half and squeeze the juice of one half into the mixture.
  5. Mix well.
  6. Cut the top and bottom off of a lemon and hollow.
  7. Fill the hollowed-out lemon with the whipped mixture.
  8. Crush ginger cookies and sprinkle the crumbles on top.
  9. Serve and enjoy!
