Ingredients (serves 1):

  • 2 ladyfinger cookies
  • 3 tbsp strong brewed coffee (cooled)
  • 2 tbsp mascarpone cheese
  • 2 tbsp heavy cream
  • 1 tbsp powdered sugar
  • 1/4 tsp vanilla extract
  • Cocoa powder, for dusting

Instructions:

  1. In a small bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and slightly fluffy. Set aside.
  2. Break the ladyfingers into pieces that fit your jar or glass. Dip each piece briefly into the cooled coffee, ensuring they’re moistened but not soggy.
  3. In your chosen serving vessel, layer half of the soaked ladyfingers at the bottom.
  4. Spoon half of the mascarpone cream over the ladyfingers, spreading it evenly.
  5. Repeat with the remaining ladyfingers and cream, creating two layers.
  6. Sift a light layer of cocoa powder over the top for a classic tiramisu finish.
  7. Refrigerate for at least 20 min. to allow the flavors to blend together. If you have more time, chill for up to 2 hours for even better results.
