Craving the comforting flavors of apple pie but don’t want to make a full dessert? This mini apple crisp is just the thing. Juicy, spiced apples are topped with a buttery oat crumble and baked to golden perfection in a ramekin. It’s a cozy treat that’s quick, easy, and perfect for savoring solo on a chilly evening! Try swapping the apple for pears, peaches, or berries for a seasonal twist.

Ingredients (serves 1):

For the Filling:

  • 1 small apple, peeled and diced (about 1/2 cup)
  • 1/2 tsp sugar or maple syrup
  • 1/4 tsp ground cinnamon
  • Pinch of nutmeg (optional)
  • 1/2 tsp flour or cornstarch
  • 1/2 tsp lemon juice

For theTopping:

  • 1 1/2 tbsp rolled oats
  • 1 tbsp flour
  • 1/2 tbsp brown sugar
  • 1/2 tbsp unsalted butter, melted (or coconut oil for a vegan option)

Instructions:

  1. Preheat your oven to 350°F (175°C). Lightly grease a small ramekin with butter or non-stick spray.
  2. In a small bowl, toss the diced apple with sugar, cinnamon, nutmeg (if using), flour, and lemon juice until evenly coated. Transfer the apple mixture to the prepared ramekin.
  3. In the same bowl, mix the oats, flour, and brown sugar. Stir in the melted butter until the mixture resembles coarse crumbs.
  4. Sprinkle the crumble topping evenly over the apple filling, covering it completely.
  5. Place the ramekin on a baking sheet and bake for 20–25 min. or until the topping is golden brown and the apples are tender.
  6. Let the crisp cool for 5 min. and then enjoy it warm. For extra indulgence, top with a scoop of vanilla ice cream or a dollop of whipped cream.

Ingredients

  • 8 oz. cream cheese
  • ½ cup powdered sugar
  • 2 lemons
  • Ginger cookies (such as Speculoos) or graham crackers

Method

  1. Place cream cheese (e.g. Philadelphia) in a mixing bowl.
