Creamy Pea Soup

Enjoy this creamy pea soup, a delightful and nutritious dish perfect for any meal!


Ingredients (serves 4):

  • 4 cups fresh or frozen peas
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • Optional toppings: croutons, fresh mint, a drizzle of olive oil or cream

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent, about 5 minutes.
  2. Add the peas to the pot and pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for about 10-15 minutes, or until the peas are tender.
  3. Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches and blend until smooth.
  4. Stir in the heavy cream or coconut milk and season with salt and pepper to taste. Let the soup simmer for an additional 5 minutes.
  5. Ladle the soup into bowls and add your favorite toppings, such as croutons, fresh mint, or a drizzle of olive oil or cream.
